DO I NEED A TEMPLATE PER CUSTOMER?
No. There is no template or field configuration; the model reads whatever layout the page has and returns it in reading order.
DOES IT RETURN JSON FIELDS?
It returns the full document text as markdown (or plain text). Line items arrive as tables, so pulling PO number, SKU and quantity is a short parse, or one cheap LLM call if you prefer.
